Chorizo Taco
CHORIZO TACOS METHOD
Ingredients
- 1 lb Ground Pork
- 2 tbsp Chili Powder
- 2 tbsp Smoked Paprika
- 1 tbsp Ground Cumin
- 2 pcs Garlic Cloves, Finely Minced
- 1 tsp Dried Oregano
- 1/4 tsp Ground Cinnamon (a pinch)
- 1/4 tsp Ground Cloves
- 1/4 cup Apple Cider Vinegar
Method
1. Mix everything together and let marinade for 1 hour or overnight
2. Once the pork has had a chance to marinate, heat a medium size skillet until nice and hot, and add a bit of oil
3. Add the pork, and let brown, while using a spoon or a spatula to break into pieces
GUACAMOLE METHOD
Ingredients
- 2 pcs Ripe Avocado
- 1/4 pcs Red Onion Diced
- 1 pcs Plum Tomato Diced (seeds removed)
- 1 pcs Green Onion Sliced
- 2 tbsp Cilantro Chopped
- 1 pcs Lime (Juiced)
- 1 tbsp EVOO
Method
1. Cut the avocados in half, remove the pit, and scoop the avocado into a bowl and mash with a fork, still leaving it a little chunky
2. To the bowl, add the diced red onion, diced tomatoes, sliced green onion, chopped cilantro, lime juice, and the olive oil
3. Mix well, and season to taste
TOMATILLO SALSA METHOD
Ingredients
- 3 pcs Tomatillo Diced
- 1/2 pcs Jalapeno Dice
- 2 pcs Green Onion Sliced
- 2 tbsp Cilantro Chopped
- 2 tbsp Lime Juice
Method
1. In a small bowl mix together the diced tomatillo, jalapeno, sliced green onion, and chopped cilantro
2. Add lime juice, and season to taste
PICKLED ONION & JALAPENO METHOD
Ingredients
- 1 full Jalapeno
- 1/2 pc Red Onion Sliced
- 1/4 cup Sliced Pickling Liquid
- 1/4 cup Boiling Water
- 3 pcs Garlic
- 1 tsp Black Peppercorn
- 2 pcs Bay Leaf
- 2 tsp Sugar
- 2 tsp Salt
Method
1. Slice the jalapenos into rounds, and the onion into strips, put each into a separate small bowl
2. Bring your pickling liquid up to a boil, with the whole garlic cloves, black pepper corn, bay leaves, sugar, and salt
3. Once boiled pour half over the sliced jalapenos, and the other half over the onion, let sit until fully cooled
CUMIN & LIME CREMA METHOD
Ingredients
- 1 cup Sour Cream
- 1 tsp Ground Cumin
- 1 pc Lime (Zested)
Method
Mix all ingredients together in a small bowl, season to taste
